Recipe: Italian Sausage, Mozzarella, and Crimini Mushroom Ravioli with Spicy Chunky Marinara Sauce

Ingredients

  • 6 egg-roll wrappers, quartered (to make 24)
  • 1/4 lb Italian sausage
  • 12 small balls of fresh mozzarella
  • 4 crimini mushrooms, diced small
  • 2 crimini mushrooms, sliced
  • 1 medium yellow sweet onion, diced
  • 1 tbsp garlic, minced
  • 3 vine-ripened tomatoes, diced
  • 1 8oz can of tomato sauce
  • 2 tbsp dried parsley
  • crushed red pepper to taste
  • 1/2 tbsp pizza seasoning (basil, oregano, granulated garlic, parsley)
  • 1/2 tbsp Herbes de Provence (savory, thyme, rosemary, marjoram)
  • salt and pepper to taste

Instructions
Ravioli:

Recipe: Shredded Pork and Gruyere Quiche

Made some tasty quiche tonight with Miche. Definitely a great way to use leftover meat.

Ingredients

  • 1 Graham cracker pie crust
  • 8 oz Apple wood smoked Gruyere cheese, grated
  • 4 whole eggs
  • 1 cup heavy cream
  • Salt, pepper, and Italian herb seasoning to taste
  • 1 bunch leeks
  • 6 medium crimini mushrooms, sliced
  • 4 cloves garlic, diced
  • 1 tbsp butter
  • 2 cups shredded Kahlua pork

Instructions

  1. Preheat oven to 350°
  2. Slice leeks lengthwise and rinse
  3. Slice leeks lengthwise again
  4. Cut leeks into 3″ segments
  5. Melt butter in a saucepan at medium heat and saute leeks until lightly brown around edges

HTPC

So I finally pulled the trigger and ordered the parts for a HTPC for my living room. Once I get it all built and setup, I’m probably going to cancel my cable subscription. I’m pretty excited about the specs of the new machine:

  • Intel Core i3-530 2.93GHz (with on-die HD graphics)
  • Biostar Eco i2 case & motherboard w/Intel H55 chipset & IR remote
  • 2 GB DDR3 1333MHz RAM
  • 500GB 7200 RPM HD
  • DVD/CD RW
  • 802.11 b/g/n USB adapter

All for about $400 shipped. I’m hoping to get everything in by Friday so I can build it over the weekend. Then I’ll slap Windows 7 and Boxee on it and watch me some hulu.
